Baby Breakfast

[It would have been more appropriate if I would have named this post "Toddler Breakfast," but alas I did not because most of the time I still refer to my twins as "babies." Moving on.]

My friend Julie has made these really healthy pumpkin pancakes for her daughter, Finley, for a long time now and when my "babies" got old enough to eat things of that sort I asked her for the recipe. (I love being able to glean tricks of the trade from smart mommies who started into motherhood before me.)

I've made them 3 times now and I learned that when feeding two hungry mouths at a time, it's better to multiply the recipe roughly 7 times in order to make a big enough batch to make the process worthwhile. Also, after standing at the stove top messily pouring, burning, and flipping pancakes I decided that there had to be a better way to make them in mass quantities. I tried several different baking dishes and I've come to the conclusion that thinly spreading the batter evenly onto parchment lined cookie sheets is the best option. 

I found that baking each sheet at 350º for about 10-15 minutes worked really well. After letting the sheet cool completely, I slid the parchment and baked "pancakes" off the cookie sheet and cut it into squares. I placed the squares in a large ziploc baggy, alternating layers of pancakes with layers of wax paper/freezer paper and put them in the freezer. At breakfast time I just pop them in the toaster (like a frozen waffle) until they're warm throughout and serve them up.

The "babies" love them and I feel so good feeding them these pancakes because they are such an easy healthy option. I know I'm always needing ideas to feed my little ones, so I wanted to pass this along (and get it documented for me to refer back to). Feel free to comment with any recipe ideas for self-feeding babies/toddlers. I would love to have them!

Prep time: 10 minutes
Cooking time: 10-15 minutes

Ingredients:
1 15 oz can pumpkin
1 3/4 cups cottage cheese
4 1/2 cups old fashioned oats
8 eggs
4 tsp cinnamon
8 tbsp honey
Note: Quantities have been multiplied ~7x from source recipe to make a large freezer batch

Directions:
Combine all ingredients in a large bowl and blend with an immersion blender until batter is relatively smooth and all ingredients are fully mixed. Thinly spread batter evenly onto parchment lined cookie sheets and bake at 350º for about 10-15 minutes or until firm and edges slightly harden. Let the cookie sheet cool completely and slide parchment along with baked "pancakes" off cookie sheet and cut into uniform squares. 

Freezer prep:
Place the pancake squares in a large ziploc baggy, alternating layers of squares with layers of wax paper/freezer paper and freeze. To serve put 3-4 squares into toaster (like a frozen waffle) until warm throughout and serve.

Babies' 1st Easter: 2013

As evidenced by most of my posts that contain photos, I am horrible about pairing down the amount of photos I upload. So, get ready for lots of Easter photos!  

We got too eager to wait until Easter to give the babies their goodies, so we cheated and they got their loot on Saturday afternoon. I wasn't even going to do actual baskets but at the last minute I grabbed two random baskets from a stash in the garage and quickly stuck their Easter bunnies and egg shaker instruments into them.


After I came back home from 7:00am worship rehearsal on Easter morning, Tom and I got the babies ready and I snapped a few pics before loading up and heading to church. 


It was a beautiful day but the sun was making us all squint and we couldn't get everyone looking at the camera at the same time, so these are the best family shots of the batch.


Grady was on the verge of a meltdown during the quick post church photo session due to his nap being interrupted at nursery pick-up time. Poor guy, Sundays are hard days.


Don't worry, after he got food in his tummy, he perked up and was quite the entertainer while we ate lunch with my parents at Charleston's.

Gorgeous Sunny Spring Day

Today was the type of day I just want to bottle up and save. It was a gorgeous sunny spring day and we took advantage of it by having the windows and doors open while we were inside and we also played in the backyard for a little bit. I didn't want to keep the babies' fair skin in the sun too long and they wouldn't leave their hats on, shocker. 


It's also worth mentioning that after Tom got home from work, the whole fam went outside and I ran 2.5 miles WITHOUT STOPPING. My pace was sloooower than slow but right now I am just aiming for endurance. I'll work on my pace later...maybe. Even though I've been training for the past 7 weeks, I've been a bit worried about how I am going to actually pull off running an entire 5k. Today's run gave me confidence. (Side note, I am down 10 lbs since the beginning of January!)


Tom pushed the babies in the stroller and had Ruby with him so it was kind of difficult for him to run with me but we met up at certain points and he would give me my water bottle. It was so encouraging to run into them and hear him yell "Go Mama!" Gotta love having your own personal cheering section!

Special Occasion Outfits

I am in complete denial and more emotional than I ever expected I would be about the fact that my babies will be 1 in 2 months!! I decided I'd better get ready because May 6th is coming soon whether I like it or not!

I was in contact last night with a seller on Etsy creating special custom outfits for the babies to wear at their party and at their 12 month photo session. Here's a rough idea of what their Etsy outfits will look like...

For Grady: A navy gingham shortall jon jon (similar style to the one pictured on the left below) with a "1" applique´ in the leftmost chevron fabric with "Grady" monogrammed across it in the green font shown below.

For Wren: A bright pink gingham bubble (similar style to the one pictured on the right below) with a "1" applique´ in the rightmost chevron fabric with "Wren" monogrammed across it in the blue font below.


I've also selected the coral/grapefruit colored outfits below for their 12 month photo session.


And because I encountered an online sale that ends today, I went ahead and ordered their Easter outfits, which are shown below. I'm not sure if you can tell, but the print on the chambray one-piece is little white anchors. Love it!


Shopping for and dressing my little people is so much fun, especially when it's for special occasion outfits!

Babies' 1st Christmas: 2012

Christmas morning began with the reading of the Christmas story out of the babies' Jesus Storybook Bible followed by opening presents at home before heading out to eat waffles with Tom's family and Christmas dinner with my family.

We had a white Christmas, followed by a white day-after Christmas too!
